Pumpkin Spice White Chocolate Chip Confetti Cookies

 

Pumpkin Spice chocolade chip koekjes voor herfst

Deze koekjes zijn dik en chewy: de perfecte combinatie! Dankzij de bloem verhouding blijven deze koekjes lekker dik. De gesmolten boter en het toegevoegde eigeel zorgen voor een heerlijk ooey-gooey cookie. Knapperig van buiten, zacht van binnen ... perfectie. Laat de pumpkin spice weg als je geen fan bent ... de koekjes zijn hoe dan ook heerlijk!

Ingrediënten

Voor ongeveer 24 koekjes

  • 250g bloem
  • 1½ theelepel pumpkin spice (of speculaaskruiden)
  • ½ theelepel bakpoeder
  • ½ theelepel zout
  • 150g lichtbruine basterdsuiker
  • 50g witte basterdsuiker
  • 1 theelepel vanille extract
  • 115g boter, gesmolten en op kamertemperatuur
  • 1 ei + 1 eigeel
  • 120g White Chocolate Chips (of chocolade naar keuze)
  • 70g Royal Orange strands (of Baking Strands naar keuze)

Voor de Pumpkin Spice (samen gemengd):

  • 3 eetlepels gemalen kaneel
  • 1 eetlepels gemalen gember
  • 2 theelepel gemalen nootmuskaat
  • 1 theelepel gemalen kruidnagel
  • 1 theelepel gemalen piment

    Instructies

      1. Verwarm je oven voor op 175ºC hetelucht of 200°C elektrisch/gas.
      2. Mix de bloem, bakpoeder, zout en pumpkin spice goed samen.
      3. Maak een kuiltje in het midden van de bloemmengsel en voeg de suikers, de vanille, de boter, en de eieren toe.
      4. Meng dit voorzichtig stukje bij beetje met het bloemmengsel, door telkens wat bloem van de zijkant bij het mengsel te voegen.
      5. Meng de White Chocolate Chips en de Royal Orange baking sprinkles in.
      6. Gebruik een ijsschep of een eetlepel om het koekjesdeeg in balletjes van gelijke grootte te scheppen (mijn schep maakt ballen van 4cm). Plaats deze gelijkmatig verdeeld op een met bakpapier beklede bakplaat.
      7. Zet minstens 40 minuten in de koelkast of zet een nacht in de koelkast.
      8. Leg de koekjesdeeg-ballen rechtstreeks uit de koelkast in de oven en bak ze 8-10 minuten. De koekjes zijn klaar als de randen net bruin beginnen te worden en het midden nog licht van kleur is.
      9. Laat de koekjes minstens 15 minuten afkoelen op de bakplaat voordat je ervan geniet.

     Tip: Maak vooraf!

    Je kunt deze koekjes vooraf maken en invriezen... altijd verse koekjes in huis! Nadat je de koekjesdeegballen 40 minuten hebt gekoeld, plaats je de ballen in een diepvrieszak. Koekjesdeeg blijft een jaar goed in de vriezer. Als je klaar bent om ze te bakken, leg ze dan direct uit de vriezer op een met bakpapier beklede bakplaat en bak ze in de oven. Voeg ongeveer 1 minuut toe aan de baktijd. Genieten!

    Pumpkin Spice chocolade chip koekjes voor herfst

    These cookies are thick and chewy: the perfect combination! Thanks to the flour ratio, these cookies stay nice and thick. The melted butter and extra egg yolk make for a deliciously ooey-gooey cookie. Crunchy on the outside, soft on the inside ... perfection. Omit the pumpkin spice if you are not a fan ... the cookies are delicious with or without!

    Ingredients

    • 250g flour
    • 1½ teaspoon pumpkin spice (or speculaas spice)
    • ½ teaspoon baking powder
    • ½ teaspoon salt
    • 150g light brown bastard sugar
    • 50g white bastard sugar
    • 1 teaspoon vanilla extract
    • 115g butter, melted and at room temperature
    • 1 egg + 1 yolk
    • 120g White Chocolate Chips (or your choice of chocolate chips)
      • 70g Royal Orange strands (or your choice of Baking Strands)

      Voor de Pumpkin Spice (samengemengd):

      • 3 Tablespoon ground cinnamon
      • 1 Tablespoon ground ginger
      • 2 teaspoon ground nutmeg
      • 1 teaspoon ground cloves
      • 1 teaspoon ground allspice

        Directions

        1. Preheat the oven to 175ºC convection (hot air) or 200°C electric/gas.
        2. Mix together the flour, baking powder, salt and pumpkin spice.
        3. Make a well in the center of the flour mixture and pour the sugars, the vanilla, the butter and the eggs into it.
        4. Carefully mix the ingredients in the center of the well with the flour mixture little by little, adding some of the flour mixture from the sides to the center mixture each time.
        5. Mix in the White Chocolate Chips and the Royal Orange baking sprinkles.
        6. Using an ice cream scoop or a tablespoon, equally dose the cookie dough into balls (my scoop makes 4cm balls). Place these equally spaced onto a lined baking sheet.
        7. Refrigerate the cookie dough balls for at least 40 minutes or overnight before baking for 8-10 minutes. The cookies are finished baking when the edges are just starting to brown and the centers are light in color.
        8. Let the cookies cool on the baking sheet for 15 minutes before enjoying.

        Tip: Make ahead!

        You can make the dough ahead of time and freeze the balls to bake at a later time...you'll have fresh baked cookies in a snap! After refrigerating the cookie dough balls for 40 minutes, place the balls into a freezer bag. Cookie dough keeps in the freezer for up to a year. When you are ready to bake them, take them directly from the freezer and place them frozen onto a lined baking sheet. Add about 1 minute to the baking time. Enjoy!
